Plant Protein Powder OEM: Beany Off-Notes, Enzymatic Hydrolysis and Mouthfeel

Plant protein powders are one of the fastest-growing categories in protein powder OEM work. Pea, soy, rice and oat protein ingredients are increasingly mature in supply and have become cost competitive. Yet brand owners consistently hit two stubborn defects at sample stage. The first is beany off-notes, perceived as grass, raw bean or cardboard in both aroma and taste and strongest once the powder is reconstituted. The second is grittiness and a powdery mouthfeel, with an unsmooth, particulate sensation and a tendency to sediment or cling to the cup. Neither is solved by adding more flavouring, since high flavouring levels bring their own chemical note and lingering bitterness. This article starts from the chemistry of beany notes and works through raw material choice, enzyme inactivation, enzymatic modification, agglomeration and flavouring, with a note on how to verify improvement sensorially.

Plant Protein Powder OEM: Beany Off-Notes, Enzymatic Hydrolysis and Mouthfeel

1. Where beany notes actually come from

The main source is lipid oxidation driven by lipoxygenase. When legume material is crushed, soaked or milled, cell structure breaks down and lipoxygenase meets linoleic and linolenic acid, rapidly producing hydroperoxides that degrade further into small volatile compounds such as hexanal and hexanol. Their odour thresholds are extremely low, so a trace amount registers as grass or raw bean. Beyond enzymatic oxidation, saponins, isoflavones and some phenolics in the raw material contribute bitterness and astringency, while autoxidation during storage produces cardboard and stale notes. Once the mechanism is clear, the options narrow: either inactivate the enzyme or remove the substrate before the two meet, or separate and convert the oxidation products after they form. Almost every effective approach sits somewhere on that chain.

2. Raw material selection

Raw material choice often contributes more to final flavour than the process does. Variety and origin come first, since lipoxygenase activity and unsaturated fatty acid content vary markedly between cultivars, and a low-activity variety is itself a natural mitigation. Ingredient form matters next: defatted flour, protein concentrate and protein isolate carry progressively less residual lipid and taste progressively cleaner, with isolate usually the mildest because most lipid and non-protein material has been removed, at higher processing cost and some loss of functional components. Storage conditions then matter, because protein ingredients oxidise faster under heat and humidity and develop stale notes, so production date and storage records belong in purchasing, and opened material should be sealed, kept cool and used within a defined window. Finally, blending plant protein with dairy or rice protein lowers perceived beany notes while improving the amino acid profile.

3. Inactivation and modification in the process

Enzyme inactivation is well established, and the key is applying heat before the material is broken. Whole-bean blanching, steam treatment or dry heat all inactivate lipoxygenase while the cells are still intact. Reverse the order and the enzyme has already met its substrate, so later heating reduces but never removes what has formed. Alkali treatment raises pH so that protein structure unfolds, which helps release bound off-note compounds and improves solubility, but alkaline conditions can denature protein and lose amino acids, so pH and time must be controlled. Enzymatic modification has become the mainstream route: protease cleaves large proteins into smaller peptides, lowering molecular weight, improving dispersibility and releasing entrapped hydrophobic flavour compounds. Excessive hydrolysis produces bitter peptides, so the balance point between bitterness and solubility has to be found. Membrane separation and adsorption then remove residual small-molecule off-notes and pigments; ultrafiltration concentrates protein while carrying away some off-flavour, and carbon or resin adsorption is more selective but needs verification that protein loss stays acceptable.

4. Improving grittiness and dissolution behaviour

Grittiness traces directly to oversized particles and poor wettability. When a protein powder meets water, particles whose surfaces do not wet quickly form lumps that are wet outside and dry inside, which the mouth immediately reads as grit. Three routes help. The first is controlling particle size distribution through milling and classification to remove coarse fractions, while remembering that going too fine increases dust and harms dispersibility, so a narrow distribution matters more than a small mean. The second is agglomeration, using a fluid bed or pressure agglomeration to build loose, porous granules so water penetrates and disperses quickly, which is the standard approach for instant protein powders and also improves flow and reduces dusting. The third is adding surface-active components, with lecithin the classic choice for its hydrophilic layer on the particle surface, though too much brings a fatty off-note and hurts flow. Homogenisation also shapes smoothness in fat-containing systems, since a uniform droplet size distribution feels smoother on the palate.

5. Flavouring and formulation balance

Flavouring works only once the base off-notes are reduced, otherwise it merely covers them. On sweetness, blends of polyols and high-intensity sweeteners must account for lingering bitterness and metallic notes, and some sweeteners amplify the astringency of plant protein, so multicomponent systems allow each component to be used at a lower level. On fat, a moderate level of vegetable oil or medium-chain triglyceride adds body and smoothness and simultaneously encapsulates part of the hydrophobic flavour fraction, lowering off-note release. Flavour selection matters too: vanilla, cocoa, malt, caramel and nut notes are broadly compatible with plant protein, while delicate dairy-style flavours tend to expose the base. Modest acidity and salt add depth, though excess acid increases astringency. One point deserves emphasis: flavour components themselves oxidise in storage, so a fat-containing formula can develop beany notes again during shelf life, which is why sensory re-evaluation after accelerated storage is required rather than release testing alone.

6. Sensory acceptance and scale-up verification

Improvement in a plant protein powder has to be verified with a repeatable sensory method. Fix the reconstitution conditions, including water temperature, dilution, stirring method and standing time, then have a trained panel score beany notes, cardboard, astringency, grittiness, smoothness, cup cling and sedimentation, and compare the scores against volatile compound data. Scale-up risk comes from agglomeration stability, uniformity of thermal treatment and blend uniformity; granule size distribution drifts easily when equipment is enlarged, which changes dissolution speed and mouthfeel. During pilot work, run three consecutive batches and collect particle size data to confirm batch-to-batch spread is acceptable before going commercial. Finally, build sensory re-evaluation into the stability protocol, because the real risk with plant protein is not the taste at release but the beany note that returns after months in storage.
